In 2025, I decided to start meal prepping my breakfasts in order to have a convenient, nutritious, and yummy meal available at the beginning of every day. I love eggs, so I decided to make an egg bake that I could portion and freeze to have ready to go.

Ingredients
- 900g of eggs
- 900g of egg whites (one large carton)
- Approx. 1400g of potatoes
- 350g of onions
- 350g of peppers
- 600g of cooked meat (of choice)
- (optional) Chickpea flour for texture
- (optional) Cheddar cheese for taste
Instructions
- Chop onions, potatoes, and peppers and toss in olive oil, salt, and pepper
- Pre-bake these ingrdients at 400°f for ~30 minutes, until tender
- Mix 900g (approximately 18 large eggs) and 900g (one large carton) of egg whites
- Pull out the vegetables when baked, let cool and incorporate with chopped meat, mixed eggs, etc.
- Fill two lined 9 x 13" baking dishes with mixture, divding evenly
- Bake for at least 30 minutes at 400°f, until mixture has fully set
- Divide into ~400g portions for optimal delicious filling breakfast yum yum.
- Let portions thaw one day in advance in the refrigerator for best results.
