Nick's breakfast scramble recipe

In 2025, I decided to start meal prepping my breakfasts in order to have a convenient, nutritious, and yummy meal available at the beginning of every day. I love eggs, so I decided to make an egg bake that I could portion and freeze to have ready to go.

skeptical eggs

Ingredients

  • 900g of eggs
  • 900g of egg whites (one large carton)
  • Approx. 1400g of potatoes
  • 350g of onions
  • 350g of peppers
  • 600g of cooked meat (of choice)
  • (optional) Chickpea flour for texture
  • (optional) Cheddar cheese for taste

Instructions

  1. Chop onions, potatoes, and peppers and toss in olive oil, salt, and pepper
  2. Pre-bake these ingrdients at 400°f for ~30 minutes, until tender
  3. Mix 900g (approximately 18 large eggs) and 900g (one large carton) of egg whites
  4. Pull out the vegetables when baked, let cool and incorporate with chopped meat, mixed eggs, etc.
  5. Fill two lined 9 x 13" baking dishes with mixture, divding evenly
  6. Bake for at least 30 minutes at 400°f, until mixture has fully set
  7. Divide into ~400g portions for optimal delicious filling breakfast yum yum.
  8. Let portions thaw one day in advance in the refrigerator for best results.
